WHAT YOU WILL NEED:
- 1/2 an 8 oz. Box of Seitan
- 2/3 of a 9.5 oz package of Lo Mein Noodles (Udon noodles can be used instead)
- 2 tbsp Sesame Oil
- 3/4 cup Broccoli (I used frozen)
- 1 Red Bell Pepper, diced
- 1 med/small Yellow Onion, diced
- 1/2 of a 5 oz. pack of Shiitake Mushrooms
- 1/2 cup Fresh Bean Sprouts
- 1 tsp Ginger Paste
- 1 tsp Garlic, Minced
- 2 tbsp Vegan Oyster Sauce
- 2 tbsp Hoisin Sauce
- 1/2 tsp Soy Sauce
- 1/2 tsp Sriracha Hot Chili Sauce (optional)
- Sprinkle of Black Pepper, or Red Pepper Flakes
DIRECTIONS:
1. Prepare noodles as directed on package (normally boil about 5 minutes). Meanwhile on a medium heat, add your 2 tbsp of sesame oil to a pan. Once heated add in the bell pepper, and the broccoli. (You do not have to thaw out the broccoli beforehand) Once bell peppers, and broccoli begin to soften, you may then add in your onion, mushroom, and Seitan pieces. Continue to saute everything until the onions appear translucent.
2. Once pasta is done, drain and set aside. After onions are fully cooked, add in bean sprouts along with all of the seasonings and sauces. Mix well. Then add in noodles. Toss around and fry for an additional 5 minutes so that the noodles are completely coated with sauce. At this point taste it to make sure that the flavor is where you want it. You may add more sauces and seasoning if necessary. Serve, and enjoy :-)
