WHAT YOU WILL NEED:
- 1 package Extra-Firm Tofu
- 2 large potatoes, cubed
- 1 small/medium sized onion, chopped
- 6 strips of Smart Bacon, cubed
- Handful of Daiya Cheese
- 1 tsp Oregano
- 1 tsp Thyme
- 1/4 to 1/2 tsp Turmeric
- 1 large Tomato, diced & guts taken out
- Salt & Pepper to taste
- Olive oil
DIRECTIONS:
1. Start out sauteing potatoes and olive oil on a medium heat. Cook them until potatoes start to get soft. Then add in the chopped onions. Once onions begin to get soft add in the tofu, and crumble it up into the pan. Throughout this process, if the pan gets dry, feel free to add a little bit more oil. After tofu is added, sprinkle your turmeric in for some added color. Stir well, and don't over use the turmeric, or it will be too gritty. At this point you can add the other spices. Next, add in the cut up smart bacon. Continue cooking until the smart bacon is thoroughly heated, and some even slightly browned. Now add in the daiya cheese to bind everything together. Mix it around until it is fully melted. I like to add the tomatoes in last.
2. Now you can prepare your tortilla however you like it. I popped mine in the microwave for 10 seconds, filled it, and wrapped it up. You could probably even serve this quesodilla style. Enjoy :-)
