WHAT YOU WILL NEED:
- 1 1/2 cups Flour
- 3/4 cup Sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 3/4 cup Non-Dairy Milk (I used almond milk.)
- 1/4 cup Vegetable Oil
- 1 to 2 cups Frozen Blueberries
*Applesauce can be substituted for half of the oil.
*You could also add 1 tsp of pure vanilla extract for some added flavor.
*Instead of regular non-dairy milk, a vanilla flavored soy or almond milk also adds extra flavor.
*A few sprinkles of cinnamon for added flavor.
*Banana can be added.
*And of coarse you can try this recipe with other berries: Blackberries, strawberries, cranberries, cherries, or raspberries.
DIRECTIONS:
1. Preheat oven to 400 degrees. Combine all dry ingredients, then add in the wet ingredients. Then fold the blueberries into the mix.
2. Baked for 25 to 30 minutes. Test with a toothpick. If toothpick comes out clean, they're done!
